The tiny AI Probe was designed by the Khalai to lay the foundation for Protoss colonies on hostile worlds where living workers would be at too great a risk. Probes are servicing the Nexus and are responsible for harvesting the Minerals and Vespene Gas that are needed to fuel the Protoss industry. To this effect they make use of an built-in particle beam. They also produce and plant the Warp-beacons (a.k.a. Micro-beacons) that allow them to teleport in buildings from distant planets once the Psionic Matrix has been established.
Being cheap to produce, they often take on the role as scouts to new settlements, where loosing one will mean a lot less to the settlement than loosing a Zealot. A more developed settlement usually applies the use of Observers to scout.
The particle beam used by the Probes can also be used as a self-defensive weapon, if no other means are available.
[edit] Game Unit
These Protoss workers are more time-efficient than SCVs or Drones, in that after they have initiated a warp-in, the Probe can return to harvesting minerals/gas, or initiate more building warp-ins. The actual "building" continues its progress on its own as long as it is powered by the Psionic Matrix. SCVs, for example, need to stay at the building until it is done.
The Probe can be of great use in a rush strategy such as building Pylons and Photon Cannons near or inside an enemy base. As Assimilators are quite cheap, they can be warped in to prevent opponent's vespene harvesting.

The StarCraft II Probe does not differ from the StarCraft one, except for in appearance. The new probe has been made to look more robotic, and naturally, with greater visual effects.
